Going back to the source is our theme for this month and when we asked our dynamic cooking star Izelle Hoffman for a recipe, this gorgeous dish arrived in our inbox, so yummy looking we wanted to eat it off the screen!   The trout comes from Woolworths, who source their trout from Katse Trout.  Katse Trout believe that full traceability is vital and say that ‘the key to trusting the food you eat, is knowing the journey it has travelled in reaching you.’ We couldn’t agree more. Grilled Trout (or Salmon) with Sesame Honey Glaze

Prep time 5min
Cooking time 20-25min
Servings 2


  • 2 Trout fillets (or Salmon fillets)
  • Whole lemon
  • Fresh thyme for garnish
  • 1g Dried thyme
  • 1g Oryx Desert Salt
  • 1g ground black Oryx Desert Pepper
  • 3tbs Raw Honey
  • 3tbs Soya sauce or Tamari sauce (Matured Soya sauce)
  • 1tbs hot water
  • 1ts Sesame Seeds
  • 100g Asparagus
  • 1tbs Olive oil
  • 1 medium red salad onion
  • Spray and cook to prepare baking tray


  • Preheat the oven to 200’C
  • Arrange the asparagus in the prepared baking tray and then place the fish fillets on top
  • Slice the onion in rings and decorate around the asparagus and fish
  • Drizzle the asparagus and onion with olive oil and a pinch of Oryx Desert Salt
  • Slice the lemon and arrange on top of the fish fillets
  • Season everything with Oryx Desert Salt, dried thyme and ground black Oryx Desert Pepper
  • Bake for 15min
  • Mix the sauce in the meantime by mixing the honey, soya sauce, hot water and sesame seeds in a cup
  • Remove the dish from the oven, drizzle everything with sauce and bake for another 5-10min till cooked to preference

Let it cool for a couple of minutes and garnish with fresh thyme, and it’s ready to be served.
