It’s Spring and braai season is here! We asked Jackie Cameron, creator of the Oryx Braai Salt recipe, for some of her favourite braai tips:

1. I always use my Oryx Braai Salt to season a dish just before serving to get the maximum benefit.

2. What also really brings out the braai salt flavour on whatever meat dish you are cooking is adding fresh squeeze of lemon juice

3. I never heavily marinate meats. I love the natural taste of top quality meat. A really simple marinade is a combination of a fabulous olive oil, braai salt, lemon wedges, roughly chopped garlic and maybe a hint of grated ginger and freshly picked chilli to add some heat. Leave to gently marinate overnight to braai the following evening.
