Black & White: Portobello Mushroom & Chicken Breast

We’re having great fun this month with our theme Black & White; we’re so intrigued to see what our talented and inspired chef partners are coming up with!

First up is our lovely Izelle Hoffman who’s created this succulently striking pairing:  white chicken breast set against a black Portobello mushroom.

What’s particularly winning about this creation is it’s also super-fast to put together. Just 15 minutes, folks and you have a dish that’s not only stunning to look at but healthy and good to eat!

Prep time: 15 minutes

1 serving/portion

Ingredients:

  • 2 large portobello mushrooms
  • 1 teaspoon olive oil
  • 1 large free-range chicken breast
  • 1 teaspoon olive oil
  • 2g dried rosemary
  • Oryx Salt and Oryx black pepper to taste
  • Caramelised onions
  • 1 small red salad onion cut in rings
  • A drizzle of raw honey
  • 2g garlic flakes
  • Pinch of Oryx Desert salt to taste
  • 40g drained sundried tomatoes
  • Drizzle of Balsamic Glaze and fresh rosemary for garnish

Methods:

  • You’ll need two frying pans to prepare the ingredients separately and then just put the dish together before serving.
  • Over medium heat, fry the mushrooms in a teaspoon of olive oil till cooked to desired texture. I prefer not to overcook them otherwise you lose all the moisture. Keep them juicy!
  • Once cooked set aside and start on the chicken.
  • Drizzle the pan with a bit of olive oil, and fry the chicken breast. Season with rosemary, Oryx Salt and Ground Black pepper. Remove and place aside once cooked.
  • To caramelise the onion, fry the onion in the second pan with in a bit of olive oil, once brown add a drizzle of honey, garlic flakes and a pinch of salt. Remove from heat once honey is caramelised.
  • Cut the sundried tomato into smaller pieces.
  • On a plate, place the chicken breast on top of the mushroom, top with sundried tomato and caramelized onion. Garnish with balsamic glaze and fresh rosemary.
  • Serve immediately and enjoy!
