Homemade Tacos with Tequila & Lime Tuna Ceviche by Chef Peter Ayub & Chef Byron Thebus

Here’s a fresh, fun and crunchy taste-sensation from our good friends and partners in salt Sense of Taste School.  Bursting with mouth-watering flavours! And as Chef Peter Ayub says ‘no Mexican dish can be without Tequila.’  🙂

Serves 4

Tacos ( if you don’t want to make your Tacos you can of course buy them ready made)

  • 1 ½  Cup Cornflakes (finely blended in the Kenwood grinder)
  • 175ml water
  • 1 teaspoon Oryx Smoked Desert Salt
  • 1 Free Range Egg Yolk
  • 15ml Cornflour

Mix all the ingredients together – to form a ball

Roll out thin rounds – remember dust your surface with flour

Bake at 140’C for about an hour – until golden brown and dry

Immediately out the oven and shape around a cylindrical item like a coke can or something similar

Tuna Ceviche

  • Cut you Fresh Tuna into nice size cubes – work on at least 7 to 8 Cubes per taco
  • Combine 60ml Tequila, 1 Teaspoon Oryx Smoked Desert Salt, ½ Teaspoon Oryx Desert Pepper, 60ml Lime Juice, 60 ml Morgenster Extra Virgin Olive Oil
  • Mix all ingredients really well – and coat your tune cubes in this liquid – allow to tuna to marinate in liquid for no more than 5 min – keep turning and coating the tuna

Lemon Yoghurt Dressing

  • 1 cup Double Cream Greek Yoghurt combined with 1 teaspoon of Tequila, ½ teaspoon Oryx Desert Salt, 60 ml of Lemon enhanced Morgenster Extra Virgin Olive Oil, Zest of 1 Lime
  • Mix well

Filling for Taco – here you can decide on what you want – lettuce or cabbage or fresh herbs – Chef Peter and Chef Byron used the following

  • Tomato chopped – small cubes
  • Jalapeno Peppers finely sliced
  • Yellow Pepper finely Sliced
  • Fresh Coriander – roughly chopped
  • Pea shoots as is – tear pieces
  • Red Onion Sprouts – finely Chopped

Combine all of the above with ½ teaspoon of Oryx Desert Salt , 1 tablespoon of lime juice and 1 tablespoon of Morgenster Extra Virgin Olive Oil

Assemble

  • Place your filling in the Taco – followed by the Tuna – and then Yoghurt Dressing – and some sprouts and sliced radishes
  • Keep the Tuna Liquid on hand as this can also be drizzled over your Tuna Taco – some guests might want some more 🙂
