10 Oct Recipes ORYX BRAAI SALT WEBER-BRAAIED BONE MARROW WITH FRESHLY PICKED THYME AND LEMON Posted on October 10, 2018October 10, 2018 by Oryx Desert Salt Ingredients: 2 bone marrow, cut in half lengthways-about 15-20 cm 4 sprigs thyme 1 lemon, fresh Oryx Braai Salt & freshly ground black pepper 2 Tbs small capers ½ bunch chives Method: Prepare a Weber-direct cooking. Break the thyme sprigs into smaller pieces. Place four pieces of thyme on and in each bone marrow half, spaced evenly. Drizzle with a squeeze of lemon juice. Season with oryx braai salt and pepper. Place onto the WEBER grill-medium heat and close the lid. Open after 5 minutes -they are cooked when the marrow changes from red to a pale white-you can also tell, they are ready, when the marrow starts slighting bubbling fat. (IMPORTANT TIP! The marrow should only just start bubbling – you have completely over cooked it when the marrow is all liquid.) Remove from the Weber and squeeze more lemon juice over the marrow bones.
