Oven Grilled Peach & Queen Pineapple Bake

We are celebrating mothers this month and we asked our chef partners to make it pretty and say it with flowers!  So, treat your Mom like a Queen with this easy yet insanely delicious Queen Pineapple recipe.

So….um … where are the flowers in this recipe?

Well, our super-queen of the kitchen Izelle Hoffmann always likes to take an unusual angle and she chose to make this particular dish for a very special reason! Did you know that one pineapple is made up of dozens of individual flowerets that all grow together to form the entire pineapple fruit?

Believe it or not, each scale on the pineapple is evidence of a separate flower!

Go on! Spoil your mum with flowers!


Oven Grilled Peach & Queen Pineapple


Prep time 5min

Cooking time 15-20min

Servings 4-5



  • 1-2 Pinapples cut up in rings or wedges
  • 5-6 cling peaches soaked in hot water


For base

  • 1/4 tsp Cinnamon
  • 50g Almond flour


For sauce

  • 2 tbsp Honey
  • Juice of 1 lime
  • 2 tsp Caramel essence
  • 1/4 tsp Oryx Desert Salt


To sprinkle over Pineapple

  • 1/4 tsp Cinnamon
  • 30g Almond flour
  • 30g almond sprinkles
  • Fresh mint for garnish



  • Preheat oven to 220’C
  • Prepare a baking dish with non-stick spray.  Sprinkle the base of the dish with almond flour and cinnamon.
  • Cut the pineapple into rings, slices or chunks and arrange in the baking dish.
  • Cut the cling peaches into small pieces and add to the pineapple.
  • Mix the sauce and pour over the fruit.
  • Finish off with almond flour and almond sprinkles and cinnamon .
  • Bake for 10-15 or bake for 10 and grill for 5
