You can have so much fun with gelatine. You can create a rainbow jelly pudding, fruit cubes, or that famous congealed salad. Whatever recipe you’re using, you want the dish to completely set and be firm, especially once removed from the mould.
Next time you’re running against the clock and you want your jiggly gelatine creation to set quickly, place the container on a bed of ice that’s sprinkled with salt. Salt allows the ice to melt more quickly but it also keeps the water temperature quite a bit colder than it would be otherwise. Icy water in contact with the mould will allow the gelatine to set faster – much more so than in your freezer. Cool, hey?
