Today’s the day we’re having a picnic party!

There’s nothing quite like dining out…outside! Have you noticed food simply tastes yummier and more delicious when you’re eating outdoors?  That’s why we decided to create our new twin salt & pepper mini-shakers that you can take anywhere.  We asked the always creative Chef Peter Ayub of Sense of Taste Chef School to let us have a peek inside his picnic basket. Here’s what we found:

Spicy Bean Salad

This is a great salad for a picnic as it keeps well  – and you can easily make it a day or 2 in advance. Simply keep it refrigerated .

Serves 4 to 6

Ingredients and Method

  • 1 x medium sized green pepper – chopped into small cubes
  • 1 x medium sized red onion finely chopped
  • A good generous handful of fresh Coriander roughly chopped
  • 1 x tin of baked beans in tomato sauce
  • 1 x tin of Butter beans – drained and rinsed
  • 1 x small fresh chilli – finely chopped – you can increase the amount of the chilli depending on how spicy you want to make the salad
  • Combine all ingredients together and mix well
  • Season with Oryx Desert Salt and Oryx Desert Pepper

Lebanese Style Lamb Kofta in Pita Pockets


Chef Peter’s roots are Lebanese – so he loves to share the beautiful aromatic flavours from Lebanon – and in Lebanon – it is very much about communal eating, sharing dishes….so this Kofta Pita Pocket is ideal for a picnic sharing with family and friends.

Serves 4 to 6

Ingredients and Method

  • Use medium- sized good quality Pita Pockets
  • Use ½ Pita Pocket per person

Mix all of the ingredients well together

  • 250g Beef Mince
  • 250g Lamb Mince
  • 1 teaspoon Ground cardamom
  • 1 teaspoon turmeric
  • 1 teaspoon ground all spice
  • 1 x good handful of Fresh Parsley finely chopped
  • 1 cup of finely chopped Spring Onions
  • 4 garlic cloves crushed
  • ¼ cup lemon juice
  • ¼ cup good quality extra virgin olive oil
  • Oryx Desert Salt and Oryx Desert Pepper to season Mince Mixture
  • Set aside in the fridge for about 20 min – to firm up

Heat up some Canola Oil  to shallow fry

Form Rugby Ball Type Shapes from your Mince Mixture (Classic Kofta shape is like a flat Rugby Ball)

Work on 3 Koftas per person – per ½ Pita

Pan Fry the koftas until Golden Brown – set aside to cool


Minted Yoghurt

  • 2 cups of double thick Greek style yoghurt
  • 1 Tablespoon finely chopped fresh Mint
  • 1 Tablespoon finely chopped fresh Parsley
  • A squeeze of Lemon juice
  • A good glug of good quality local Olive Oil
  • Season generously with Oryx Desert Salt and Oryx Desert Pepper

To Assemble

  • Spread some of the Yoghurt dressing on the inside of the Pita Pocket
  • Put in Chunks of Cucumber and Shredded Lettuce
  • Add in the Koftas and drizzle some more of the yoghurt dressing onto the Koftas
  • Tuck in and enjoy!


Steak Sandwich

Serves 4 to 6

Ingredients and Method

  • Buy good quality Focaccia Bread
  • 2 beef minute steaks per person (you will need to cut your focaccia bread to size)
  • Season your Minute Steaks with Oryx Desert Salt and Oryx Desert Pepper
  • Flash fry at high heat
  • Spread a good mustard onto the bottom layer of the focaccia – either English Mustard or Dijon Mustard
  • Then add slices of Tomato (don’t forget to season the tomato with Oryx Desert Salt and Oryx Desert Pepper)
  • Then Lettuce, then Minute Steaks, Feta Cheese and Pea Shoots or Parsley
